What's Cooking: Farewell Summer Meal

I have been trying to cook a lot lately. Living in a hotel for a few months really made me sick of take out and ramen. I haven't been able to photograph every meal.. and the ones I have been able to get pictures of.. well, the pictures didn't turn out too well. But I felt like sharing the deliciousness.

On The Menu:
Marinated Steak, 
Corn On The Cob, 
Fried Zucchini and Squash

Super Easy

Marinate the steak in a mixture of A1 Sauce, Liquid Smoke, Montreal Steak Sauce and fresh minced garlic for an hour at room temperature.
Broil the steak using a  2" or more deep metal baking cake pan. Tear off a sheet of tin foil large enough to place in the pan to completely cover the bottom and sides of pan. Fill the pan with a minimum of 2 cups of tap water. Lay a large enough, metal wire rack on top of pan. Arrange one or two steaks so the juices will drip into the water as it broils. Place this assembled pan in the oven on the center oven rack. Broil steak with oven door cracked open.  
Always keep the oven door partially open while broiling to avoid baking the steak which makes it tough.


While the steak is cooking, wash the squash and the zucchini. Slice them and cut the slices in halves. Marinate for about 20 minutes in a mixture of olive oil, oregano, and any other dried herbs you think would be awesome. 
I added some fresh onions because I'm a huge onion lover, you of course don't have to. 
Fry these up in a frying pan until they start to get tender and the onions start to caramelize. 
Turn the stove off and add some cheese. I choose mozzarella.  
Stir a bit until the cheese starts to melt. 

Last of course is corn on the cob.
I had to ask my mom on this one... I wasn't sure how long to keep the corn boiling. 
Here is my mom's answer.
 So there you go. 
Boil the corn for 3 minutes and you are done! 
I put a mixture of butter, oregano and salt on my corn.


I just love home cooked meals.. don't you?

    I love the zucchini and the squash, especially with some cubed tomato and then add some motzarella cheese... mmmmmm

  4. Yummy! You should try Zucchini with raspberry vinaigrette drizzled on top. Such a yummy summer snack!

  5. We are obsessed w liquid smoke in our house - it's also good on burgers and BBQ! Oh and have u put that steak seasoning on baked potatoes yet? To. Die. For!
